BAKED ZITI WITH RED TOMATO SAUCE RECIPE

Preparation - Medium - requires spaghetti sauce
Serves 6
Ziti are large pasta special to the south, but you can make this dish with rigatoni, macaroni, penne, mostaccioli, etc.
- Make one of the following sauces, or used a prepared sauce:

SIMPLE TOMATO SAUCE

BOLOGNESE SAUCE, RAGU RECIPE

TOMATO SAUCE WITH OREGANO
- MEAT AND TOMATO SAUCE WITH OREGANO
- 2 cups spaghetti sauce
- 6 ounces of provolone or pecorino cheese, sliced, shredded or grated
- 6 ounces mozzarella cheese, sliced or shredded
- 1 1/2 cups sour cream
- 2 tablespoons grated Parmesan or pecorino cheese
- 1 pound ziti or rigatoni

METHOD:
- PUT 6 quarts pasta water to boil in a large pot.
- PREPARE spaghetti sauce, if you are making your own.
- WHEN pasta is cooked 'al dente' - 8 to 10 minutes - drain and set aside.
- PREHEAT oven to 350 degrees F.
- GREASE an 8 X 12 baking pan with butter or olive oil.
- ARRANGE a layer of the pasta on the bottom of the pan.
- ADD a layer of the cheese.
- COVER with the sour cream.
- COVER with a layer of the spaghetti sauce.
- LAYER in the remaining pasta.
- ADD another layer of the cheeses.
- COVER with the remaining spaghetti sauce.
- SPRINKLE on the 2 T Parmesan or pecorino.
- BAKE in middle rack of 350 degree oven for 1/2 hour, until golden on top.
- SERVE.
